It's definatly crazy what has happened to wing prices. Once in a while I can get them at the local market with the two pieces still attached for 99 cents a pound. I co-owned a restaurant for a few years about 5 years ago and it was a struggle to get a good consistant wing at a good price.
As far at the thighs go, I grill boneless ones all the time and brush em with my wing sauce as they are finishing...
I put em in a foil packet or aluminum pan covered and seasoned with a little beer, salt, pepper, and garlic powder. Put em on the grill to cook about 20 minutes over medium heat to par cook.
Then out of the foil or pan onto the grill for another 10-15 min while getting brushed with a sauce made of butter, redhot, pepper, garlic, a little OJ, and a little honey. Sometimes I add soy sauce, sometimes a bunch of parm cheese, or bbq sauce... Wing sauce with extra garlic and parm cheese in it was the fan favorite this summer at my house...
